Roasted Shiitake Mushrooms

There is a reason roasted shiitake mushrooms are called the "bacon" of the vegan world. Properly roasted, it is a crisp and savory delight. Consumed like a snack or a crunchy topper to a bowl or salad; you honestly can't go wrong with them.
Hands-on Preparation Time: 5 minutes
Ingredients:
4 cups shiitake mushrooms, loosly sliced
1/4 cup olive oil
1/2 teaspoon sea salt
Preheat oven to 375 degrees F convection bake. (If using non-convection, baking time will take longer.) Toss mushrooms with oil and salt. Evenly spread mushrooms across a parchment lined cookie sheet, without any overlapping. Bake for 15-20 minutes, until your crisp preference is reached. Test as they cook to see how you like them. Like bacon, everybody has a slightly different preference!
